Description
Aloo Gobi (Potato and Cauliflower) is arguably the most universal, comforting staple of North Indian cuisine. It is a classic dry or semi-dry stir-fry (sukhi sabji) where tender chunks of gold potatoes (aloo) and perfectly cooked cauliflower florets (gobi) are tossed together with a basic yet highly aromatic blend of everyday spices.
